Easy 10-Minute Tuna Salad

Ingredients

The salad

  • 1 5-ounce can Tuna (albacore, drained)
  • ¼ cup finely chopped red onion or scallions
  • ¼ cup chopped herbs (dill, tarragon, cilantro, parsley, or basil)
  • 1 tablespoon capers (or 2 tablespoons finely diced pickle)
  • 1 tablespoon caper juice (or pickle juice)
  • 3–4 tablespoons mayo or veganaise (or olive oil)
  • 2 teaspoons whole-grain mustard
  • to taste salt and pepper
  • to taste optional cayenne

Optional additions

  • to taste chopped celery
  • to taste cucumber
  • to taste radish
  • to taste jalapeno
  • to taste lemon or lime zest

Instructions

  1. Shred the drained tuna in a medium bowl using a fork.
  2. Mix in the chopped onion, herbs, capers, and caper juice.
  3. Add any optional ingredients if desired, but keep it under ½ cup.
  4. Stir in the mayo, starting with less and adding more for desired creaminess.
  5. Incorporate the mustard and season with salt, pepper, and cayenne to taste.
  6. Serve the tuna salad over dressed greens, rice crisps, in pita or tortillas, or on toast.
  7. Garnish with microgreens, herbs, or avocado, or use it to make a tuna melt.
