Ingredients

The base

  • cups gluten-free rolled oats or muesli
  • 1 cup no sugar-added nut or seed butter
  • 3 Tbsp honey or maple syrup
  • 1 tsp vanilla extract

Add-ins

  • cup dried fruit + chopped nuts/seeds
  • 1 Tbsp chia seeds or ground flaxseed
  • ¼ cup mini chocolate chips

Instructions

  1. Combine the rolled oats, nut or seed butter, honey or maple syrup, and vanilla extract in a food processor or blender.
  2. Pulse until the mixture starts to come together, scraping the sides as needed.
  3. Transfer the mixture to a bowl and add the remaining ingredients, mixing to combine.
  4. Form the mixture into small round bites, pressing firmly to hold them together.
  5. If the bites do not stick, add more nut butter as needed.
  6. Optionally, drizzle with melted chocolate.
  7. Store the energy bites in an airtight container in the refrigerator.
