Ingredients

The base

  • 2 cups uncooked old fashioned oats
  • ¼ cup packed brown sugar
  • 2 tablespoons unsweetened shredded coconut
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The wet ingredients

  • 1 large egg
  • 1 large egg white
  • cup skim milk
  • 1 5.3 oz container Dannon Light & Fit Greek Toasted Coconut Vanilla yogurt

The fruit

  • cup chopped pineapple chunks

Instructions

  1. 1. Preheat the oven to 350 degrees and prepare a 12-count muffin tin with cooking spray.
  2. 2. In a medium bowl, mix together the oats, brown sugar, coconut, baking powder, and salt.
  3. 3. In a large bowl, whisk together the egg white, egg, skim milk, and yogurt until smooth.
  4. 4. Combine the dry ingredients with the wet ingredients and mix until well combined.
  5. 5. Fold in the chopped pineapple chunks.
  6. 6. Distribute the mixture evenly into the muffin tin.
  7. 7. Bake for 20-24 minutes until lightly browned and a toothpick comes out clean.
