Ingredients

The base

  • 2 cups old fashioned oats
  • 1 large egg
  • 1 large egg white
  • cup skim milk
  • cup unsweetened applesauce
  • ½ teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The topping

  • 1 cup pineapple chunks
  • 5 tablespoons packed brown sugar
  • 6 pieces Maraschino cherries

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. Mix pineapple chunks with 1 tablespoon of brown sugar and place maraschino cherries in the muffin tin.
  3. Distribute the coated pineapple chunks around the cherries in the muffin tin.
  4. In a large bowl, combine oats, remaining brown sugar, baking powder, and salt.
  5. In another bowl, whisk together the egg, egg white, milk, applesauce, and vanilla extract.
  6. Combine wet and dry ingredients, then spoon the mixture into the muffin tin over the fruit.
  7. Bake for 20-24 minutes until lightly browned and a toothpick comes out clean.
  8. Let cool for 10 minutes before flipping the oatmeal singles upside down for serving.
