Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
- Mix pineapple chunks with 1 tablespoon of brown sugar and place maraschino cherries in the muffin tin.
- Distribute the coated pineapple chunks around the cherries in the muffin tin.
- In a large bowl, combine oats, remaining brown sugar, baking powder, and salt.
- In another bowl, whisk together the egg, egg white, milk, applesauce, and vanilla extract.
- Combine wet and dry ingredients, then spoon the mixture into the muffin tin over the fruit.
- Bake for 20-24 minutes until lightly browned and a toothpick comes out clean.
- Let cool for 10 minutes before flipping the oatmeal singles upside down for serving.
