Ingredients

The dressing

  • 2/3 cup Greek yogurt
  • 2 tablespoons Greek yogurt
  • 1 tablespoon whole grain or Dijon mustard
  • ½ teaspoon garlic powder
  • 1 small clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon curry powder
  • 1/8 teaspoon cayenne
  • ½ teaspoon sugar (optional)
  • kosher salt to taste
  • black pepper to taste

The salad

  • 1 apple
  • 2 tablespoons raisins
  • ½ cup diced celery
  • 1 hard-boiled egg, peeled and chopped
  • 2 large collard green or savoy cabbage leaves
  • 4 small collard green or savoy cabbage leaves
  • ½ cup alfalfa sprouts (optional)

Instructions

  1. Whisk together the yogurt, mustard, garlic, lemon juice, curry powder, salt, pepper, cayenne, and sugar in a large bowl. Adjust seasoning to taste.
  2. Spiralize the apple and add it to the bowl along with the raisins, celery, and chopped egg. Toss to combine.
  3. Pack the salad into the cabbage leaves, top with sprouts if using, and roll them up like burritos. Secure with a toothpick and halve before serving.
