Ingredients

The salad

  • 2 cups cooked chicken, diced
  • ½ medium apple, diced
  • 1 rib celery, finely diced
  • 2 tablespoons red onion, finely diced
  • ¼ cup raisins
  • ¼ cup roasted and salted cashews, roughly chopped
  • 2-4 tablespoons chopped fresh cilantro

The dressing

  • ½ cup mayonnaise
  • 1-2 teaspoons curry powder
  • 1 tablespoon lime juice
  • to taste fine salt

Instructions

  1. Mix mayonnaise, curry powder, lime juice, and salt in a medium bowl.
  2. Add the cooked chicken, diced apple, celery, and onions; stir until combined.
  3. Fold in the raisins, cashews, and cilantro.
  4. Serve in a lettuce wrap, on greens, in a tortilla, or as a sandwich.
