Ingredients

The salad

  • 1 ¼ lbs chicken breasts
  • 2 stalks celery, diced
  • 2 scallions, diced
  • ¼ cup raisins
  • ¼ cup diced walnuts

The dressing

  • ½ cup plain Greek yogurt or organic mayonnaise
  • 1 tsp lemon juice
  • 2 tsp curry powder
  • ¼ tsp salt or more to taste
  • ¼ tsp turmeric

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Place the chicken in a covered baking dish and bake for 25 to 30 minutes until cooked through.
  3. 3. Let the chicken cool, then cut it into cubes.
