Ingredients

The salad

  • 4 cups cooked chicken breast, diced into bite-sized pieces
  • ½ cup celery, diced small
  • 2 tablespoons red onion, finely chopped
  • cup golden raisins
  • ½ cup roasted cashews, coarsely chopped
  • 2 tablespoons fresh parsley leaves, finely chopped

The dressing

  • ¾ cup mayonnaise
  • 2 tablespoons sour cream
  • 2 teaspoons lemon juice, freshly squeezed
  • 2 teaspoons yellow curry powder
  • ½ teaspoon sugar
  • to taste salt and pepper

Instructions

  1. Place the diced chicken in a large bowl.
  2. Add the celery, red onion, raisins, cashews, and parsley to the bowl.
  3. In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, curry powder, sugar, salt, and pepper.
  4. Pour the dressing over the chicken and vegetable mixture.
  5. Toss gently to coat, then serve immediately or refrigerate for later use.
