Ingredients

The waffles

  • 1 ¼ cup unsweetened almond milk
  • 1 tsp lemon juice or apple cider vinegar
  • ½ cup dairy-free yogurt (coconut vanilla)
  • ¼ cup melted coconut oil or olive oil
  • 2 Tbsp maple syrup
  • ½ cup gluten-free rolled oats
  • 1 ¾ cup gluten-free flour blend
  • ¼ tsp salt
  • 1 ½ tsp baking powder
  • 2 Tbsp coconut sugar or organic cane sugar

Optional add-ins

  • 1 tsp pure vanilla extract
  • 1 Tbsp flaxseed meal
  • ½ Tbsp chia seed
  • ½ tsp ground cinnamon

Optional toppings

  • as desired sliced banana
  • as desired fresh fruit
  • as desired berry compote
  • as desired Nutella
  • as desired coconut whipped cream
  • as desired dairy-free yogurt

Instructions

  1. Combine almond milk and lemon juice or vinegar and let set for 5 minutes.
  2. Add yogurt, coconut oil, vanilla extract, and maple syrup to the mixture and whisk well.
  3. In a separate bowl, mix the dry ingredients together until well combined.
  4. Combine wet and dry ingredients and mix until incorporated. Let the batter sit for 10 minutes.
  5. Preheat the waffle iron and coat it with non-stick spray or oil.
  6. Pour about ½ cup of batter onto the waffle iron and cook according to the manufacturer's instructions.
  7. Keep cooked waffles warm in a single layer in a 200-degree F oven until ready to serve.
  8. Serve immediately with desired toppings.
