Instructions
- Combine almond milk and lemon juice or vinegar and let set for 5 minutes.
- Add yogurt, coconut oil, vanilla extract, and maple syrup to the mixture and whisk well.
- In a separate bowl, mix the dry ingredients together until well combined.
- Combine wet and dry ingredients and mix until incorporated. Let the batter sit for 10 minutes.
- Preheat the waffle iron and coat it with non-stick spray or oil.
- Pour about ½ cup of batter onto the waffle iron and cook according to the manufacturer's instructions.
- Keep cooked waffles warm in a single layer in a 200-degree F oven until ready to serve.
- Serve immediately with desired toppings.
