Easy Brown Spanish Rice

Ingredients

The rice

  • 1 ½ cups long grain brown rice
  • 3 ½ cups water
  • 1 cube vegetable bouillon

The sauce and spices

  • 2 tablespoons tomato paste
  • ½ teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • ½ teaspoon salt (optional)

The optional ingredient

  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Heat olive oil in a medium pot or Dutch oven over medium heat.
  2. Add brown rice and cook while stirring for 1 minute.
  3. Add water, vegetable bouillon cube, tomato paste, garlic powder, chili powder, oregano, and salt. Mix well.
  4. Cover the pot with a lid and cook over medium heat, stirring occasionally, for about 45 minutes until the liquid is absorbed and the rice is tender.
