Ingredients

The main ingredients

  • 1 lb red potatoes, quartered
  • 1 lb Italian ground sausage
  • 1 lb kale, chopped
  • 1 pint cherry or grape tomatoes
  • ½ cup panko breadcrumbs
  • ¼ cup milk
  • 1 large egg, beaten

The seasonings and oils

  • ¾ cup olive oil, divided
  • 1 tsp smoked paprika
  • tsp kosher salt, divided
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • 3 Tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp brown sugar
  • ½ tsp garlic powder

Instructions

  1. Preheat the oven to 450°F.
  2. Drizzle quartered potatoes with olive oil and season with smoked paprika, salt, black pepper, and red pepper flakes, then toss and place on a sheet pan.
  3. Add tomatoes to the same bowl, sprinkle with salt, and scatter over the potatoes.
  4. Soak panko breadcrumbs in milk, then mix with ground sausage and beaten egg in a large bowl.
  5. Roll mixture into 16 meatballs and place them on the sheet pan.
  6. Bake meatballs and vegetables for 10 minutes, then turn the meatballs and bake for another 10 minutes.
  7. In the meantime, mix kale with red wine vinegar, olive oil, Dijon mustard, brown sugar, garlic powder, and salt.
  8. After baking, scatter the dressed kale over the sheet pan and roast for an additional 3 to 4 minutes until charred.
  9. Serve by placing raw kale in bowls, topping with roasted kale, tomatoes, meatballs, and potatoes.
