Instructions
- Preheat the oven to 450°F.
- Drizzle quartered potatoes with olive oil and season with smoked paprika, salt, black pepper, and red pepper flakes, then toss and place on a sheet pan.
- Add tomatoes to the same bowl, sprinkle with salt, and scatter over the potatoes.
- Soak panko breadcrumbs in milk, then mix with ground sausage and beaten egg in a large bowl.
- Roll mixture into 16 meatballs and place them on the sheet pan.
- Bake meatballs and vegetables for 10 minutes, then turn the meatballs and bake for another 10 minutes.
- In the meantime, mix kale with red wine vinegar, olive oil, Dijon mustard, brown sugar, garlic powder, and salt.
- After baking, scatter the dressed kale over the sheet pan and roast for an additional 3 to 4 minutes until charred.
- Serve by placing raw kale in bowls, topping with roasted kale, tomatoes, meatballs, and potatoes.
