Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ½ cup unsalted butter
  • ¾ cup packed light or dark brown sugar
  • cup granulated sugar
  • 1 Tablespoon unsulphured or dark molasses
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk together the dry ingredients in a bowl and set aside.
  2. Beat the softened butter, brown sugar, and granulated sugar until creamy, then add the molasses, egg, and vanilla extract and mix until combined.
  3. Combine the wet and dry ingredients, then cover and chill the dough for at least 2 hours.
  4. Preheat the oven and prepare baking sheets.
  5. Roll the chilled dough into balls and stamp each one with a cookie stamp.
  6. Bake the cookies until the edges are set, then cool on the baking sheet before transferring to a wire rack.
