Ingredients

The cookie dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoons cornstarch
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, melted
  • cups packed light or dark brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract

For rolling

  • cup granulated sugar

Instructions

  1. Combine the flour, baking soda, cornstarch, cinnamon, and salt in a large bowl.
  2. In a separate bowl, whisk the melted butter and brown sugar until smooth, then add the egg and vanilla.
  3. Mix the wet ingredients into the dry ingredients until a soft dough forms.
  4. Cover the dough and chill for at least 2 hours.
  5. Preheat the oven to 325°F (163°C) and prepare baking sheets with parchment paper.
  6. Roll 2 tablespoons of dough into balls and then roll in granulated sugar.
  7. Place the dough balls on the baking sheets, spaced apart.
  8. Bake for 8-9 minutes, then gently press down the tops and return to the oven for an additional 2-4 minutes.
  9. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
