Chewy Brown Sugar Cookies

Instructions
- Combine the flour, baking soda, cornstarch, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk the melted butter and brown sugar until smooth, then add the egg and vanilla.
- Mix the wet ingredients into the dry ingredients until a soft dough forms.
- Cover the dough and chill for at least 2 hours.
- Preheat the oven to 325°F (163°C) and prepare baking sheets with parchment paper.
- Roll 2 tablespoons of dough into balls and then roll in granulated sugar.
- Place the dough balls on the baking sheets, spaced apart.
- Bake for 8-9 minutes, then gently press down the tops and return to the oven for an additional 2-4 minutes.
- Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
