Kickin' BBQ Shredded Chicken

Ingredients

The chicken

  • 1 whole large chicken

The sauce

  • 2 Tablespoons ghee or fat of choice
  • ½ cup white onion, minced
  • 3 cloves garlic, crushed
  • cups apple cider vinegar
  • ½ cup tomato sauce or crushed tomatoes
  • 2 Tablespoons tomato paste
  • 3 Tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Tabasco or hot sauce

Instructions

  1. Rinse and pat the chicken dry, then place it in the slow cooker and season with salt and pepper.
  2. Cook the chicken on high for 3 hours or low for 5 hours.
  3. In a large saucepan, melt the ghee over medium heat and add the minced onion, cooking until softened.
  4. Add the garlic, apple cider vinegar, tomato sauce, tomato paste, honey, salt, black pepper, and Tabasco to the saucepan, stirring well.
  5. Bring the sauce to a boil, then reduce to a simmer until it thickens slightly.
  6. Once the chicken has cooled, shred the meat and mix it with the sauce.
