Lemon Garlic Salmon

Ingredients

The sauce

  • ¼ cup ghee or butter
  • 6-8 cloves garlic, minced
  • ¼ cup chicken broth
  • ¼ cup fresh lemon juice
  • to taste sea salt

The salmon

  • 1 tablespoon avocado oil
  • 4 filets salmon (about 6 ounces each)
  • to taste fresh cracked black pepper
  • 2 tablespoons fresh parsley, minced
  • as needed fresh lemons, thinly sliced (for garnish)

Instructions

  1. Melt ghee or butter in a small saucepan over medium heat and sauté minced garlic until fragrant.
  2. Add chicken broth, lemon juice, and salt to the saucepan, then simmer until reduced by 1/3 to 1/2.
  3. Remove salmon from the fridge 10-20 minutes before cooking and season with salt and pepper.
  4. Heat avocado oil in a large skillet over medium-high heat until shimmering.
  5. Place salmon filets skin side up in the skillet and cook until lightly browned, about 2-3 minutes.
  6. Carefully flip the salmon and cook for another 3-4 minutes until the skin is crisp and the flesh feels firm.
  7. Remove from heat and pour the lemon garlic sauce over the salmon.
  8. Sprinkle with parsley and garnish with lemon slices before serving.
