Char Siu Pork Ribs

Ingredients

The Ribs

  • 2-3 pounds Baby Back Ribs
  • to taste unit Sunshine State of Mind Craft BBQ Rub
  • to taste unit Fresh Ground Black Pepper

Char Siu Sauce

  • 1/3 cup Hoisin Sauce
  • ¼ cup Hot Honey
  • ¼ cup Soy Sauce
  • 3 tablespoons Dry Sherry
  • 1 teaspoon Chinese 5 Spice
  • 1 tablespoon Cane Sugar
  • 1 teaspoon Sesame Oil
  • 2 tablespoons Beet Powder

Instructions

  1. Prepare the grill for indirect cooking at 250°F.
  2. Remove the membrane from the back of the ribs and season with BBQ rub and pepper.
  3. Add smoking chunks to the fire.
  4. Line a drip pan with aluminum foil and place the ribs in the pan.
  5. Combine all sauce ingredients in a bowl and whisk until mixed.
  6. Baste the ribs with sauce every hour for about 3 ½ hours.
  7. Increase the heat for the last 15 minutes to char the sauce slightly.
  8. Remove the ribs from the grill and let them rest for 10-15 minutes.
  9. Cut the ribs between the bones to serve.
