Instructions
- Prepare the grill for indirect cooking at 250°F.
- Remove the membrane from the back of the ribs and season with BBQ rub and pepper.
- Add smoking chunks to the fire.
- Line a drip pan with aluminum foil and place the ribs in the pan.
- Combine all sauce ingredients in a bowl and whisk until mixed.
- Baste the ribs with sauce every hour for about 3 ½ hours.
- Increase the heat for the last 15 minutes to char the sauce slightly.
- Remove the ribs from the grill and let them rest for 10-15 minutes.
- Cut the ribs between the bones to serve.
