Steel Cut Oats with Orange Zest and Cranberry Sauce

Ingredients

The oats

  • 3 cups water
  • 1 cup almond milk
  • 1 tablespoon unsalted butter
  • 1 cup steel-cut oats
  • ¼ teaspoon salt
  • 1 orange zest and juice

The cranberry sauce

  • 2 cups fresh or frozen cranberries
  • ¼ cup honey or maple syrup
  • 1 tablespoon arrowroot starch or cornstarch
  • ½ teaspoon powdered ginger
  • cup water
  • 2 tablespoons water

Optional garnishes

  • to taste toasted and chopped pecans
  • to taste yogurt

Instructions

  1. 1. In a large saucepan, bring the water and almond milk to a simmer.
  2. 2. Melt the butter in a skillet and toast the oats until golden and fragrant.
  3. 3. Stir the oats into the simmering water and milk mixture, then reduce heat and simmer for about 20 minutes.
  4. 4. Stir in the salt and continue to simmer until most of the liquid is absorbed, about 10 minutes.
  5. 5. Add the orange zest and juice, let stand for 5 minutes before serving.
  6. 6. Serve in bowls topped with cranberry sauce and optional garnishes.
