Steel Cut Oats with Cranberry and Pears

Ingredients

The oats

  • 4 cups water
  • 1 cup steel cut oats

The fruits and nuts

  • 1 large pear, with peel, diced
  • 1 ½ cups fresh or frozen cranberries (or ½ cup dried cranberries)
  • ½ cup chopped pecans

The seeds and spices

  • ¼ cup chia seeds
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon cardamom

The sweetener

  • 2 tablespoons pure maple syrup (optional)

Instructions

  1. Boil water in a medium pot.
  2. Stir in the oats and mix well.
  3. Add the diced pear, cranberries, and spices, stir, cover, and cook on medium heat for 20 minutes, stirring occasionally.
  4. Mix in the pecans, chia seeds, and maple syrup, then cook for an additional 5 minutes, stirring frequently.
  5. Check the texture of the porridge and cook longer if needed until desired texture is achieved.
  6. Serve in bowls and enjoy with plant-based milk if desired.
