Steel Cut Oats with Pears, Ginger and Dates

Ingredients

The oats

  • ½ cup steel cut oats
  • 2 cups water

The fruit and nuts

  • 1 large ripe pear, with peel, diced
  • ¼ cup coarsely chopped cashews
  • 6 medium dates, pitted, chopped

The spices

  • ½ teaspoon cardamom
  • ½ teaspoon freshly grated ginger (or dried ground ginger)

Instructions

  1. Boil water in a small pot.
  2. Stir in oats, diced pear, cashews, cardamom, ginger, and dates.
  3. Cover and simmer over medium heat, stirring frequently, until liquid is absorbed and oats are tender (about 25 minutes).
  4. Divide into servings and serve with plant-based milk if desired.
