Caramelized Pear Steel-Cut Oats

Ingredients

The oats

  • ¾ cup steel-cut oats
  • cups water
  • Tbsp butter or olive oil
  • 2-3 Tbsp brown sugar

The pears

  • 2 pieces Bosc pears
  • ¼ tsp cinnamon
  • 1 Tbsp lemon juice

Optional toppings

  • to taste pecans
  • to taste granola
  • to taste nut butter

Instructions

  1. Bring water to a boil in a small saucepan.
  2. Add a pinch of salt and the steel-cut oats, then cover and reduce heat to low.
  3. Cook for 15 minutes until the water is absorbed and the oats are tender.
  4. In a separate medium saucepan, heat butter or olive oil over medium heat.
  5. Add brown sugar and stir, then add the chopped pears, lemon juice, and cinnamon.
  6. Cover and cook for about 10 minutes until the pears are tender and golden brown.
  7. Remove the lid and cook a bit longer to caramelize the pears.
  8. Divide the oats into two bowls and top with the caramelized pears and optional toppings.
