Ingredients

  • 8 tablespoons unsalted butter
  • ¾ cup sweetener
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • teaspoon freshly squeezed lemon juice
  • ¾ cup flour
  • cups rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup raisins

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sweetener in a mixing bowl for about 2 minutes.
  3. Add the eggs, vanilla, and lemon juice, then blend until light and fluffy.
  4. Mix in the flour, oats, baking soda, salt, and cinnamon on low speed for about 45 seconds.
  5. Fold in the raisins.
  6. Line a baking sheet with a silicone mat.
  7. Roll the dough into balls and flatten the tops slightly.
  8. Bake for 10-14 minutes until golden brown at the edges.
  9. Cool on the baking mat for 5 minutes before transferring to a wire rack.
