Instructions
- Preheat the oven to 350°F.
- Cream the butter and sweetener in a mixing bowl for about 2 minutes.
- Add the eggs, vanilla, and lemon juice, then blend until light and fluffy.
- Mix in the flour, oats, baking soda, salt, and cinnamon on low speed for about 45 seconds.
- Fold in the raisins.
- Line a baking sheet with a silicone mat.
- Roll the dough into balls and flatten the tops slightly.
- Bake for 10-14 minutes until golden brown at the edges.
- Cool on the baking mat for 5 minutes before transferring to a wire rack.
