Maple Mustard Skillet Chicken

Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 2 cloves minced garlic
  • cup low-sodium chicken broth or white wine

The sauce

  • 3 Tbsp real maple syrup
  • 1 Tbsp stone ground mustard
  • 1 Tbsp dijon mustard
  • 1 tsp minced rosemary, parsley or thyme (optional)

Seasoning

  • to taste salt and freshly ground black pepper

Instructions

  1. Pound chicken to even out thickness and season with salt and pepper.
  2. Heat olive oil in a skillet and sear chicken for about 6 minutes on each side until cooked through.
  3. Transfer chicken to a plate and melt butter in the skillet.
  4. Sauté garlic in the melted butter until golden brown.
  5. Add chicken broth and scrape up browned bits from the skillet.
  6. Stir in maple syrup and both mustards, letting the mixture simmer until slightly thickened.
  7. Return chicken to the pan and spoon sauce over it, garnishing with herbs if desired.
