Vegan Cheesy Taco Pasta

Ingredients

  • 8 ounces shell pasta
  • 1 tablespoon olive oil
  • 8 ounces veggie burger meat
  • 2 cups salsa
  • cups shredded vegan cheese
  • 2 tablespoons taco seasoning
  • 1 cup water
  • to taste sea salt and ground black pepper

Instructions

  1. Cook the pasta in salted boiling water according to package instructions, reserving 1 cup of pasta water.
  2. In a pan, heat olive oil over medium-high heat and crumble in the veggie burger, adding taco seasoning. Cook for about 3 minutes.
  3. Reduce heat to medium, add reserved pasta water, cooked pasta, salsa, and shredded vegan cheese. Stir until the cheese melts and the sauce is smooth, about 3 minutes.
  4. Taste and adjust seasoning as needed, then serve immediately.
