Quick Tomato Salsa

Ingredients

  • 2 whole tomatoes, seeded and finely chopped
  • 1 whole jalapeno pepper, seeded and finely chopped
  • 1 ear fresh raw corn, kernels removed
  • 2 tbsp red onion, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • ½ tsp cumin
  • ½ tsp salt
  • 1 tbsp lime juice

Instructions

  1. Stand the corn on end in a large bowl and cut the kernels off with a sharp knife.
  2. Put the corn in a medium mixing bowl and add all remaining ingredients.
  3. Mix well and serve immediately or refrigerate for a couple of hours to blend flavors.
