Leftover Turkey Salad with Apples and Cranberries

Ingredients

  • 3-4 cups chopped leftover turkey meat
  • ¾ cup mayonnaise
  • ½ cup diced celery
  • cup chopped green onion
  • 1 medium green apple
  • ½ cup chopped pecans
  • ½ cup dried cranberries
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Combine all ingredients in a large mixing bowl.
  2. Stir until everything is fully mixed and coated.
  3. Serve immediately or cover and refrigerate for at least one hour before serving.
