Ingredients

The dough

  • ½ recipe homemade whole wheat pizza dough
  • 1 lb store-bought whole wheat pizza dough

The toppings

  • 1 clove garlic
  • 2–3 cups mixed fresh vegetables (e.g., eggplant, bell pepper, zucchini, onion)
  • 1 Tablespoon olive oil
  • to taste salt & freshly ground black pepper
  • 1 Tablespoon cornmeal
  • cup pizza sauce
  • ¾ cup shredded mozzarella cheese
  • 1 Tablespoon shredded parmesan cheese (optional)
  • to taste dried basil or oregano (optional)
  • handful fresh basil (optional)

Instructions

  1. Prepare the whole wheat pizza dough and let it rise according to the recipe instructions.
  2. Preheat the oven to 400°F (204°C) and prepare a baking sheet with parchment paper.
  3. Place the garlic and mixed vegetables on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 15 minutes.
  4. Increase the oven temperature to 475°F (246°C) and prepare the baking sheet or pizza pan with olive oil and cornmeal.
  5. Shape the dough into a 12-inch circle and create a rim around the edges.
  6. Brush the dough lightly with olive oil and sprinkle with chopped roasted garlic.
  7. Spread the pizza sauce evenly over the dough, then add the mozzarella cheese and roasted vegetables on top.
  8. Bake for 15-16 minutes until the crust is brown and the cheese is melted.
  9. Remove from the oven and sprinkle with optional toppings if desired. Slice and serve immediately.
