Ingredients

  • 4 slices sourdough bread
  • 1 whole red bell pepper (or jarred roasted red peppers)
  • 2 teaspoons olive oil
  • ½ cup olive tapenade
  • ½ cup goat cheese
  • 1 handful fresh spinach

Instructions

  1. Prepare the red bell pepper by cutting it in half and then into thirds, tossing with olive oil, salt, and pepper, and grilling until soft and slightly charred.
  2. Spread olive tapenade on two slices of bread and goat cheese on the other two slices.
  3. Top the tapenade slices with grilled peppers and spinach, then place the goat cheese slices on top.
  4. Grill the assembled sandwiches on a panini press for about 10 minutes, checking to avoid burning.
