Instructions
- Prepare the red bell pepper by cutting it in half and then into thirds, tossing with olive oil, salt, and pepper, and grilling until soft and slightly charred.
- Spread olive tapenade on two slices of bread and goat cheese on the other two slices.
- Top the tapenade slices with grilled peppers and spinach, then place the goat cheese slices on top.
- Grill the assembled sandwiches on a panini press for about 10 minutes, checking to avoid burning.
