Ingredients

  • 1 pound ground lamb
  • to taste none Kosher salt
  • to taste none Freshly ground black pepper
  • 1 teaspoon Tabil seasoning

Instructions

  1. Preheat the SousVide Supreme to 137°F.
  2. Season the ground lamb generously with salt and pepper, then add the Tabil seasoning and mix gently.
  3. Divide the meat into 4 patties and freeze them for 2 hours.
  4. Vacuum seal the patties, placing two per bag.
  5. Submerge the sealed patties in the SousVide Supreme for about 2 hours.
  6. Remove the patties, dry them with paper towels, and arrange them on a baking rack over a foil-lined tray.
  7. Use a kitchen torch to char the patties evenly, keeping the flame 4-6 inches away.
