Sous Vide Grass Fed Beef Burgers

Ingredients

  • 1 pound grass fed ground beef
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • 2 tablespoons bacon grease

Instructions

  1. Divide the ground beef into 4 portions and form them into patties.
  2. Season both sides of the patties with salt and pepper without mixing the seasoning into the meat.
  3. Place the burgers on a plastic-wrapped plate and cover with another sheet of plastic wrap.
  4. Freeze the patties for at least 2 hours.
  5. Once frozen, vacuum seal each patty and store in the fridge until ready to cook.
  6. Preheat the SousVide Supreme to 132°F and submerge the burger packets.
  7. Cook the burgers for at least 30 minutes, up to 12 hours.
  8. After cooking, remove the burgers from their packets and dry them with paper towels.
  9. Heat bacon grease in a skillet and sear each side of the burgers for about a minute.
  10. Use a kitchen torch to brown the edges of the burgers.
  11. Top the burgers with your favorite toppings and serve over salad greens.
