Sous Vide Grass Fed Beef Burgers

bacon grease
Instructions
- Divide the ground beef into 4 portions and form them into patties.
- Season both sides of the patties with salt and pepper without mixing the seasoning into the meat.
- Place the burgers on a plastic-wrapped plate and cover with another sheet of plastic wrap.
- Freeze the patties for at least 2 hours.
- Once frozen, vacuum seal each patty and store in the fridge until ready to cook.
- Preheat the SousVide Supreme to 132°F and submerge the burger packets.
- Cook the burgers for at least 30 minutes, up to 12 hours.
- After cooking, remove the burgers from their packets and dry them with paper towels.
- Heat bacon grease in a skillet and sear each side of the burgers for about a minute.
- Use a kitchen torch to brown the edges of the burgers.
- Top the burgers with your favorite toppings and serve over salad greens.
