Sous Vide Umami Slider Burgers

Ingredients

The burgers

  • 2 pounds grass fed ground beef
  • 2 tablespoons Red Boat fish sauce
  • 2 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 tablespoon unsweetened applesauce
  • to taste freshly ground pepper
  • to taste kosher salt

For cooking

  • 3 tablespoons coconut oil

Instructions

  1. Sauté the onions in coconut oil until softened.
  2. Add minced garlic and season with salt and pepper.
  3. Cool the onion and garlic mixture to room temperature.
  4. In a large bowl, mix beef, onion mixture, applesauce, fish sauce, and pepper.
  5. Divide the mixture into 16 balls and form slider burgers.
  6. Place the burgers on a plastic-wrap lined tray and freeze for at least 2 hours.
  7. Once frozen, vacuum seal the burgers.
  8. Cook the sealed burgers in a sous vide at 132°F for at least 1½ hours.
  9. Sear the sliders in coconut oil for about 1 minute on each side.
