Sous Vide Umami Slider Burgers

Red Boat fish sauce

onion, finely diced

unsweetened applesauce

For cooking

coconut oil
Instructions
- Sauté the onions in coconut oil until softened.
- Add minced garlic and season with salt and pepper.
- Cool the onion and garlic mixture to room temperature.
- In a large bowl, mix beef, onion mixture, applesauce, fish sauce, and pepper.
- Divide the mixture into 16 balls and form slider burgers.
- Place the burgers on a plastic-wrap lined tray and freeze for at least 2 hours.
- Once frozen, vacuum seal the burgers.
- Cook the sealed burgers in a sous vide at 132°F for at least 1½ hours.
- Sear the sliders in coconut oil for about 1 minute on each side.
