Instructions
- Defrost the spinach in a microwave or overnight in the refrigerator, then press out the liquid.
- Heat the butter or coconut oil in a skillet and sauté the onions and mushrooms until softened.
- Blend the coconut milk, parsley, and celery until pureed and mix with the ground beef in a bowl.
- Add the spinach, coconut flour, garlic, salt, pepper, nutmeg, eggs, and sautéed mushrooms to the beef mixture and combine gently.
- Form the mixture into small patties, about 2 inches in diameter.
- Heat coconut oil in a skillet and fry the sliders in batches for about 3 minutes on each side.
- Serve with a sprinkle of fleur de sel and warmed tomato sauce if desired.
