Ingredients

The sliders

  • 1 pound frozen chopped spinach
  • 1 tablespoon unsalted butter or coconut oil
  • ½ cup finely chopped yellow onion
  • ½ pound Cremini mushrooms, finely chopped
  • ¼ cup coconut cream or coconut milk
  • ½ cup small-dice celery
  • ½ cup loosely packed fresh Italian parsley leaves
  • 1 pound ground beef
  • ¼ cup coconut flour
  • 1 medium garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons freshly ground black pepper
  • ¼ teaspoon freshly grated nutmeg
  • 2 large eggs, lightly beaten
  • 2 tablespoons coconut oil for frying
  • to taste fleur de sel

For serving

  • to taste warmed tomato sauce

Instructions

  1. Defrost the spinach in a microwave or overnight in the refrigerator, then press out the liquid.
  2. Heat the butter or coconut oil in a skillet and sauté the onions and mushrooms until softened.
  3. Blend the coconut milk, parsley, and celery until pureed and mix with the ground beef in a bowl.
  4. Add the spinach, coconut flour, garlic, salt, pepper, nutmeg, eggs, and sautéed mushrooms to the beef mixture and combine gently.
  5. Form the mixture into small patties, about 2 inches in diameter.
  6. Heat coconut oil in a skillet and fry the sliders in batches for about 3 minutes on each side.
  7. Serve with a sprinkle of fleur de sel and warmed tomato sauce if desired.
