Green Pork & Shiitake Sliders

Ingredients

  • 1 pound frozen chopped spinach
  • 1 tablespoon coconut oil (or favorite fat)
  • ½ cup finely chopped yellow onion
  • 6 pieces reconstituted dried shiitake mushrooms, finely chopped
  • ¼ cup coconut milk
  • ½ cup small-dice celery
  • ½ cup loosely packed fresh cilantro
  • 1 pound ground pork
  • 2 large eggs, lightly beaten
  • ⅛-¼ cup coconut flour
  • 1 tablespoon Red Boat fish sauce
  • 1 tablespoon coconut aminos
  • 1 teaspoon kosher salt
  • teaspoons freshly ground black pepper
  • 2-4 tablespoons coconut oil for frying

Instructions

  1. Defrost the frozen spinach in a microwave for about 4 minutes and press out the liquid.
  2. Heat 1 tablespoon of coconut oil in a skillet and sauté the chopped onions and mushrooms until softened.
  3. Blend the coconut milk, celery, and cilantro until smooth.
  4. In a large bowl, combine the ground pork, spinach, blended mixture, mushrooms, onions, eggs, coconut flour, fish sauce, coconut aminos, salt, and pepper.
  5. Form the mixture into small patties, about 2 inches in diameter.
  6. Heat 2 tablespoons of coconut oil in a skillet and fry the patties in batches for about 3 minutes on each side.
