Green Pork & Shiitake Sliders

Instructions
- Defrost the frozen spinach in a microwave for about 4 minutes and press out the liquid.
- Heat 1 tablespoon of coconut oil in a skillet and sauté the chopped onions and mushrooms until softened.
- Blend the coconut milk, celery, and cilantro until smooth.
- In a large bowl, combine the ground pork, spinach, blended mixture, mushrooms, onions, eggs, coconut flour, fish sauce, coconut aminos, salt, and pepper.
- Form the mixture into small patties, about 2 inches in diameter.
- Heat 2 tablespoons of coconut oil in a skillet and fry the patties in batches for about 3 minutes on each side.
