Homemade Dill Pickles

Ingredients

The pickling solution

  • 2 cups water
  • 2 cups white wine vinegar
  • ¼ cup salt
  • ¼ cup granulated sugar

The cucumbers and spices

  • 1 pound pickling cucumbers, sliced into ½ inch rounds
  • 4 sprigs fresh dill
  • 4 cloves garlic
  • 2 leaves bay leaves
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon red chili flakes (optional)

Instructions

  1. In a saucepan, boil the water, vinegar, salt, and sugar until the sugar dissolves.
  2. In two pint-sized Mason jars, add the cucumbers, dill, garlic, bay leaves, peppercorns, and red chili flakes.
  3. Pour the vinegar mixture into the jars, leaving some extra pickling liquid if necessary.
  4. Let the jars cool completely at room temperature, then cover and refrigerate for about 4 days before serving.
