Ingredients

  • 2 cups fresh cilantro
  • ½ cup roasted cashews (unsalted)
  • ¼ cup grated Parmesan or nutritional yeast
  • 2 large garlic cloves
  • ½ of a lemon or lime juiced
  • ¼ teaspoon smoked paprika
  • pinch crushed red pepper flakes
  • ⅓ – ½ cup olive oil
  • to taste Kosher salt
  • to taste pepper

Instructions

  1. Combine cilantro, cashews, Parmesan, garlic, lime juice, smoked paprika, and crushed red pepper flakes in a food processor.
  2. Pulse the ingredients until well combined, scraping the sides as necessary.
  3. While running the food processor, slowly add olive oil in a steady stream.
  4. Transfer the pesto to a bowl and season with salt and pepper to taste.
