Creamy Cashew Pea Pesto

Ingredients

  • ½ cup fresh peas
  • ½ cup soft kale or parsley
  • ¼ cup cashews
  • 3-4 tablespoons vegan Parmesan cheese
  • 1 small lime (juice)
  • to taste none sea salt
  • 2-3 tablespoons olive oil

Instructions

  1. Pulse the peas and kale in a food processor until combined.
  2. Add the cashews, parmesan cheese, lime juice, and salt, then blend until combined.
  3. With the processor running, slowly pour in 2 tablespoons of olive oil, blending until creamy.
  4. Taste and add another tablespoon of olive oil or more salt if needed.
  5. Enjoy the pesto!
