Ingredients

The filling

  • 1.25 lbs raw 95% lean ground beef
  • 8 oz sliced white mushrooms
  • 2 cloves garlic, minced
  • 8 oz canned tomato sauce
  • 1 cup pasta sauce
  • 10 oz frozen chopped spinach, thawed and squeezed of liquid
  • 1 tablespoon sliced fresh basil
  • ¼ teaspoon salt
  • ½ teaspoon Italian seasoning
  • pinch crushed red pepper flakes
  • pinch black pepper

The dough and cheese

  • 1 can (7.5 oz) refrigerated biscuit dough, cut into quarters
  • ¾ cup shredded 2% Mozzarella cheese
  • ½ cup fat free ricotta cheese

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 baking dish with cooking spray.
  2. In a skillet, cook the ground beef over medium heat, breaking it apart, then add the mushrooms and cook until both are done.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in tomato sauce, pasta sauce, spinach, salt, Italian seasoning, pepper flakes, black pepper, and biscuit dough pieces until combined.
  5. Transfer the mixture to the baking dish and spread evenly, then bake for 25 minutes.
  6. Remove from the oven, sprinkle with Mozzarella, and dollop ricotta on top, adding more Italian seasoning.
  7. Return to the oven and bake for another 15 minutes until hot and bubbly.
