Ingredients

The meat and sauce

  • 1 lb. Lean Ground Beef
  • 28 oz. Canned Crushed Tomatoes with Basil
  • 14 oz. Canned Petite Diced Tomatoes
  • 2 tsp. Italian Seasoning, dried
  • 3 tsp. garlic, minced
  • ½ cup onion, minced
  • ½ cup Red or Yellow Pepper, chopped
  • 1 tsp. Crushed Red Pepper

The pasta and cheese

  • 8 Whole Wheat Lasagna Noodles Break noodles into 2-inch pieces.
  • ¼ cup water
  • ½ cup part skim mozzarella cheese
  • ½ cup Parmesan cheese
  • cup Part Skim Ricotta

Garnish

  • to taste Parsley for garnishing

Instructions

  1. Brown the ground beef over medium heat and add onion, pepper, and garlic.
  2. Season with salt and pepper, and cook until the beef is no longer pink.
  3. Add the canned tomatoes and Italian seasoning, then bring to a slow boil.
  4. Reduce heat and let the sauce simmer for at least 30 minutes.
  5. Preheat the oven to 375 degrees.
  6. Add the broken lasagna noodles to the sauce and mix carefully.
  7. Stir in ¼ cup of water and sprinkle the mozzarella, Parmesan, and dollops of ricotta on top.
  8. Cover with a lid or foil and bake for 45 minutes.
  9. Remove the cover and bake for an additional 10 minutes, then check the noodles for doneness.
