Ingredients

The meat sauce

  • 2 lbs ground beef
  • 2 small zucchini
  • ½ onion finely chopped
  • 2 tbsp garlic, minced
  • 3 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 56 oz cans crushed tomatoes
  • 1 tsp sugar
  • 1 piece parm rind

The noodles and cheese

  • 12 pieces lasagna noodles
  • 4 cups mozzarella cheese
  • 1 cup parmesan cheese

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a pan over medium heat, brown the ground beef with zucchini, garlic, onion, pepper, basil, oregano, and 2 tsp of salt.
  3. Once the beef is browned and veggies are translucent, add the crushed tomatoes, sugar, remaining salt, and parmesan rind.
  4. Allow the sauce to simmer for at least 1 hour.
  5. Build the lasagna by layering sauce, noodles, mozzarella, and parmesan, repeating until all ingredients are used.
  6. Cover with foil and bake at 375 for 40 minutes, then remove foil and bake for an additional 10-12 minutes until the top is done.
