Sausage French Toast Casserole

Ingredients

  • 1 lb challah bread, diced into big cubes
  • 1 package sausage links, cooked and diced
  • ¾ cup pecans, diced
  • 6 units eggs
  • 2 cups milk
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • ¼ tsp salt
  • 1 stick (½ cup) butter
  • 1 cup coconut sugar
  • to taste powdered sugar for topping

Instructions

  1. Preheat the oven to 375°F and grease a 9x13 casserole dish.
  2. In a large bowl, combine the diced challah, chopped sausage, and pecans.
  3. In a separate bowl, whisk together the eggs, milk, cinnamon, vanilla, and salt.
  4. Pour the egg mixture over the challah mixture and stir until evenly coated, being careful not to over mix.
  5. Transfer the mixture into the greased casserole dish.
  6. Melt the butter in a small bowl in the microwave, then whisk in the coconut sugar and pour it over the casserole mixture.
  7. Bake for 40-45 minutes or until the top is brown and crispy.
  8. Let cool for 10 minutes before serving.
