Instructions
- Whisk together the apricot preserves, dijon mustard, apple cider vinegar, garlic powder, and water to prepare the sauce.
- Heat olive oil in a large skillet over medium-high heat.
- Season both sides of the pork chops with salt and pepper.
- Add the pork chops to the hot skillet in batches to avoid overcrowding, cooking each side for about 5 minutes until browned.
- Remove the cooked chops and cover them with foil to keep warm.
- Reduce the heat to medium-low and pour the apricot sauce into the skillet, stirring to deglaze the pan for 1-2 minutes.
- Serve the pork chops with the sauce spooned over top or coat them in the sauce in the skillet.
