Ingredients

The pork chops

  • 4 pieces thin cut pork chops

The sauce

  • 2 Tbsp olive oil
  • ½ cup apricot preserves
  • 2 Tbsp dijon mustard
  • 2 Tbsp apple cider vinegar
  • tsp garlic powder
  • ¼ cup water
  • a pinch salt
  • a pinch pepper

Instructions

  1. Whisk together the apricot preserves, dijon mustard, apple cider vinegar, garlic powder, and water to prepare the sauce.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season both sides of the pork chops with salt and pepper.
  4. Add the pork chops to the hot skillet in batches to avoid overcrowding, cooking each side for about 5 minutes until browned.
  5. Remove the cooked chops and cover them with foil to keep warm.
  6. Reduce the heat to medium-low and pour the apricot sauce into the skillet, stirring to deglaze the pan for 1-2 minutes.
  7. Serve the pork chops with the sauce spooned over top or coat them in the sauce in the skillet.
