Simple Peach, Basil and Ricotta Flatbread

Ingredients

The flatbread

  • 2 pieces store-bought whole wheat flatbreads or naan

The toppings

  • cup ricotta
  • 1 to 2 pieces ripe yellow peaches, peeled and sliced
  • 2 teaspoons fresh basil, chopped
  • to taste sea salt and black pepper
  • to drizzle balsamic vinegar reduction

Instructions

  1. Preheat the oven to 425°F.
  2. Place the flatbreads on a cast iron pan or baking sheet.
  3. Spread ricotta evenly across the flatbreads, leaving a ½ inch border.
  4. Top with peach slices.
  5. Bake for 10 to 12 minutes.
  6. Sprinkle with chopped basil, sea salt, and black pepper.
  7. Slice and drizzle with balsamic reduction before serving.
