Instructions
- Combine diced chicken, kosher salt, and avocado oil in a bowl and set aside.
- Heat a skillet over medium-high heat and whisk eggs with fish sauce.
- Add avocado oil to the hot pan, pour in the eggs, and scramble them until soft. Transfer to a platter.
- In the same skillet, add more avocado oil and sauté onions and carrots until softened. Add minced garlic and cook until fragrant.
- Add the seasoned chicken to the pan and cook until fully cooked.
- Transfer the chicken and veggies to the platter with the scrambled eggs.
- Add avocado oil to the pan, stir in riced cauliflower, cover, and cook until al dente.
- Pour in All-Purpose Stir-Fry Sauce and stir until absorbed.
- Mix in thawed peas, reserved eggs, chicken, and vegetables.
- Sprinkle green onions and drizzle with toasted sesame oil, then stir to combine.
- Taste and adjust seasoning as needed before serving.
