Chicken Cauliflower Fried Rice

Ingredients

The main ingredients

  • ¾ pound boneless and skinless chicken breast or thighs
  • 3 large eggs
  • 1 small onion
  • 3 cloves garlic
  • 1 large carrot
  • 1 pound riced cauliflower
  • ¼ cup All-Purpose Stir-Fry Sauce
  • ½ cup frozen peas
  • 2 scallions green onions

The seasonings and oils

  • ¾ teaspoon Red Boat fish sauce
  • ½ teaspoon Diamond Crystal kosher salt
  • 4 teaspoons avocado oil
  • ½ teaspoon toasted sesame oil (optional)

Instructions

  1. Combine diced chicken, kosher salt, and avocado oil in a bowl and set aside.
  2. Heat a skillet over medium-high heat and whisk eggs with fish sauce.
  3. Add avocado oil to the hot pan, pour in the eggs, and scramble them until soft. Transfer to a platter.
  4. In the same skillet, add more avocado oil and sauté onions and carrots until softened. Add minced garlic and cook until fragrant.
  5. Add the seasoned chicken to the pan and cook until fully cooked.
  6. Transfer the chicken and veggies to the platter with the scrambled eggs.
  7. Add avocado oil to the pan, stir in riced cauliflower, cover, and cook until al dente.
  8. Pour in All-Purpose Stir-Fry Sauce and stir until absorbed.
  9. Mix in thawed peas, reserved eggs, chicken, and vegetables.
  10. Sprinkle green onions and drizzle with toasted sesame oil, then stir to combine.
  11. Taste and adjust seasoning as needed before serving.
