Keto Tomato Sauce

Ingredients

  • 2 cans whole peeled tomatoes with puree (28 oz each)
  • 1 tablespoon olive oil
  • 4 cloves garlic, sliced
  • ½ medium onion, peeled but left intact
  • 1 ½ teaspoons dried basil
  • ½ teaspoon dried oregano
  • ½ can water (fill one of the tomato cans half way)
  • 1 teaspoon salt
  • 1 ½ tablespoons low carb sugar
  • 1-2 sprigs fresh basil (optional)
  • 1-2 sprigs fresh parsley (optional)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Slice the garlic and place it in a pot with olive oil, then heat to medium and cook until softened.
  2. Pour the whole peeled tomatoes into a blender and pulse to break them up to your desired consistency.
  3. Add the processed tomatoes to the pot along with the onion, dried basil, dried oregano, salt, sweetener, and half a can of water.
  4. Simmer the mixture for 1 hour, then add fresh basil, parsley, and Parmesan cheese.
  5. Continue simmering for an additional 30-60 minutes until the sauce thickens to your liking.
  6. Remove the onion and sprigs of fresh herbs before serving or storing.
