Instructions
- Prepare the Chipotle Beef Barbacoa in a crock pot.
- Wash the sweet potatoes, poke holes in them with a fork, and wrap each in a paper towel.
- Microwave the first sweet potato on high for 4-5 minutes, and 2-3 minutes for each additional potato.
- Once the sweet potatoes are tender, cut them in half.
- Top the sweet potatoes with the Beef Barbacoa.
- Serve with crumbled queso fresco and cilantro if desired.
