Instructions
- Microwave the frozen hash browns for 60-90 seconds until slightly soft.
- In a large bowl, combine the hash browns with eggs, sour cream or Greek yogurt, dill, chives, salt, garlic powder, onion powder, and black pepper.
- Heat oil in a nonstick skillet and place dollops of the mixture, pressing them into flat patties.
- Cook the patties for 2-3 minutes on each side until crispy.
- In the same skillet, crack the eggs and season with salt and pepper, cooking until the whites are almost set.
- Cover the skillet and cook until the whites are set but the yolks remain runny.
- Serve the fried eggs on top of the crispy hash brown patties with optional sour cream or yogurt.
