Ingredients

Hash Brown Patties

  • 3 cups frozen hash brown potatoes
  • 2 large eggs
  • 2 tablespoons sour cream or plain Greek yogurt
  • 1 ½ tablespoons fresh dill, chopped or dried dill
  • 1 tablespoon fresh chives, chopped or dried chives
  • 1 teaspoon coarse salt
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 2 tablespoons oil

Fried Eggs

  • 4 large eggs
  • to taste coarse salt
  • to taste ground black pepper
  • for serving dollops of sour cream or plain Greek yogurt

Instructions

  1. Microwave the frozen hash browns for 60-90 seconds until slightly soft.
  2. In a large bowl, combine the hash browns with eggs, sour cream or Greek yogurt, dill, chives, salt, garlic powder, onion powder, and black pepper.
  3. Heat oil in a nonstick skillet and place dollops of the mixture, pressing them into flat patties.
  4. Cook the patties for 2-3 minutes on each side until crispy.
  5. In the same skillet, crack the eggs and season with salt and pepper, cooking until the whites are almost set.
  6. Cover the skillet and cook until the whites are set but the yolks remain runny.
  7. Serve the fried eggs on top of the crispy hash brown patties with optional sour cream or yogurt.
