Power Waffles

Instructions
- Warm ½ cup of milk and dissolve the yeast in it.
- Chop the crystallized ginger and steep it in another ½ cup of hot milk for 10 minutes.
- Combine the steeped ginger milk, yeast milk, and remaining ½ cup of milk.
- In a large bowl, mix all dry ingredients together.
- Pour the milk mixture into the dry ingredients and stir to combine.
- Cover the bowl and let the mixture rise overnight at room temperature.
- The next morning, heat the waffle iron.
- Melt the butter and whip the egg whites.
- Stir ¾ of the melted butter into the batter, then fold in the egg whites and remaining butter.
- Ladle batter onto the waffle maker and cook until golden brown.
