Ingredients

  • cups non-fat milk (divided)
  • ¾ cup crystallized ginger
  • 3 tablespoons sugar
  • ½ teaspoon fresh (compressed) yeast
  • cups Sir Galahad all-purpose flour
  • ¾ cup buckwheat flour
  • 150 g rolled oats
  • 1 tablespoon cinnamon
  • ½ teaspoon baking powder
  • 2 units egg whites
  • cup melted butter

Instructions

  1. Warm ½ cup of milk and dissolve the yeast in it.
  2. Chop the crystallized ginger and steep it in another ½ cup of hot milk for 10 minutes.
  3. Combine the steeped ginger milk, yeast milk, and remaining ½ cup of milk.
  4. In a large bowl, mix all dry ingredients together.
  5. Pour the milk mixture into the dry ingredients and stir to combine.
  6. Cover the bowl and let the mixture rise overnight at room temperature.
  7. The next morning, heat the waffle iron.
  8. Melt the butter and whip the egg whites.
  9. Stir ¾ of the melted butter into the batter, then fold in the egg whites and remaining butter.
  10. Ladle batter onto the waffle maker and cook until golden brown.
