Bubble Waffles

Ingredients

  • 2 large eggs
  • 1 tsp vanilla extract
  • cup milk or water
  • 1 cup cake flour or all-purpose flour
  • 1 tsp baking powder
  • tsp salt
  • ½ cup white granulated sugar
  • 2 tsp butter or oil
  • 1 Tbsp water (for thinning the batter as needed)

Instructions

  1. Whisk together the eggs, vanilla extract, and milk or water in a small bowl; set aside.
  2. In a large bowl, sift or whisk together the flour, sugar, salt, and baking powder.
  3. Combine the egg mixture with the flour mixture and whisk until well combined.
  4. Melt the butter and add it to the batter, which will be thinner than traditional waffle batter.
  5. Preheat the bubble waffle iron on a sheet pan to catch drippings and spray it with kitchen spray.
  6. Pour batter into the center of the iron, close the lid, and flip it over, cooking for 1 minute and 30 seconds.
  7. Flip it again and cook for another 1 minute and 30 seconds until golden brown.
  8. Remove the waffles using a fork or wooden spatula, and serve them with toppings of your choice.
