Peach Crumble Bars

Peach Filling

Instructions
- Preheat the oven to 350°F and line an 8x8 baking pan with foil, coating it with cooking spray.
- In a large bowl, combine flour, oats, brown sugar, and cinnamon, then cut in the cold butter until the mixture resembles coarse crumbs.
- Set aside ¾ cup of the mixture, mix in chopped almonds, and reserve for topping.
- Press the remaining mixture into the bottom of the prepared pan and bake for 15 minutes.
- For the filling, whisk together the egg and sugar until smooth, then stir in vanilla, flour, and salt, and fold in the peaches.
- After the crust has baked, pour the peach filling over it and sprinkle with the reserved oat mixture.
- Bake for about 30 minutes or until golden brown on top, then cool for 30 minutes on a rack.
- For the glaze, mix powdered sugar, milk, and vanilla until smooth, then drizzle over the cooled bars.
- Refrigerate for 2 hours before cutting into squares.
