Ingredients

Crust and Streusel

  • 1 cup all-purpose flour
  • ½ cup old fashioned rolled oats
  • cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • 10 tablespoons cold unsalted butter
  • ½ cup finely chopped almonds

Peach Filling

  • 1 large egg
  • ½ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon salt
  • 2 cups chopped peeled peaches
  • ½ teaspoon vanilla extract

Glaze

  • ½ cup powdered sugar
  • 2 teaspoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking pan with foil, coating it with cooking spray.
  2. In a large bowl, combine flour, oats, brown sugar, and cinnamon, then cut in the cold butter until the mixture resembles coarse crumbs.
  3. Set aside ¾ cup of the mixture, mix in chopped almonds, and reserve for topping.
  4. Press the remaining mixture into the bottom of the prepared pan and bake for 15 minutes.
  5. For the filling, whisk together the egg and sugar until smooth, then stir in vanilla, flour, and salt, and fold in the peaches.
  6. After the crust has baked, pour the peach filling over it and sprinkle with the reserved oat mixture.
  7. Bake for about 30 minutes or until golden brown on top, then cool for 30 minutes on a rack.
  8. For the glaze, mix powdered sugar, milk, and vanilla until smooth, then drizzle over the cooled bars.
  9. Refrigerate for 2 hours before cutting into squares.
