Ingredients

Base

  • 1 ½ cups gluten-free flour or white whole wheat flour
  • 1 cup oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 large egg
  • cup melted coconut oil
  • ¼ cup maple syrup
  • cup water

Topping

  • 12 oz fresh cherries
  • 2 medium peaches
  • ½ cup almond meal
  • ½ cup shredded coconut
  • ½ cup gluten-free flour
  • ½ tsp salt
  • ¼ cup coconut oil
  • ¼ cup maple syrup

Instructions

  1. Preheat the oven to 375°F and grease a 9x13 inch pan.
  2. Combine the dry ingredients for the base in a medium bowl.
  3. Mix the wet ingredients for the base in a small bowl and combine with the dry ingredients.
  4. Press the mixture evenly into the pan.
  5. Pit the cherries and peaches, then coarsely chop the cherries in a food processor.
  6. Arrange the chopped cherries in diagonal stripes across the base layer.
  7. Coarsely chop the peaches in a food processor and place them in diagonal stripes between the cherry stripes.
  8. Combine the remaining ingredients to make the crumb topping and distribute it over the fruit.
  9. Bake for 25 to 30 minutes, then let cool completely before cutting.
