Instructions
- Preheat the oven to 350°F and line a baking pan with parchment paper.
- In a food processor, combine cold butter, flour, sugar, and salt; pulse until crumbly.
- Press the mixture into the prepared pan and bake for 12-15 minutes until golden.
- Blanch peaches to remove skins, then slice and mix with sugar, lemon juice, cornstarch, vanilla, cinnamon, and nutmeg.
- Prepare the crumb topping by mixing oats, brown sugar, melted butter, and salt.
- Spread the peach filling over the baked crust and top with the oat crumb mixture.
- Bake for 40-45 minutes until the topping is golden and filling is bubbling.
- Cool to room temperature, then refrigerate before slicing.
