Ingredients

Shortbread Crust

  • ½ cup cold unsalted butter
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • pinch table salt

Peach Filling

  • 2 pounds ripe peaches
  • ½ cup white sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Oat Crumb Topping

  • 1 cup rolled oats
  • ½ cup light brown sugar
  • ½ cup unsalted butter
  • pinch table salt

Instructions

  1. Preheat the oven to 350°F and line a baking pan with parchment paper.
  2. In a food processor, combine cold butter, flour, sugar, and salt; pulse until crumbly.
  3. Press the mixture into the prepared pan and bake for 12-15 minutes until golden.
  4. Blanch peaches to remove skins, then slice and mix with sugar, lemon juice, cornstarch, vanilla, cinnamon, and nutmeg.
  5. Prepare the crumb topping by mixing oats, brown sugar, melted butter, and salt.
  6. Spread the peach filling over the baked crust and top with the oat crumb mixture.
  7. Bake for 40-45 minutes until the topping is golden and filling is bubbling.
  8. Cool to room temperature, then refrigerate before slicing.
